




**Job Summary:** The Marination Supervisor is responsible for overseeing the entire marination process of poultry, meat, and other food products as per company recipes and standards. The role ensures consistency in taste, texture, hygiene, and quality while maintaining production efficiency and food safety compliance. **Key Responsibilities:** * Supervise and coordinate all activities in the marination section. * Ensure marination recipes and standard operating procedures (SOPs) are strictly followed. * Monitor raw material usage and maintain accurate batch records. * Check quality and freshness of raw materials before marination. * Ensure correct measurement of ingredients and adherence to portion control. * Maintain daily production logs, temperature records, and marination reports. * Coordinate with the procurement and stores team for timely availability of ingredients. * Monitor staff performance and ensure proper training and hygiene practices. * Ensure FIFO (First In, First Out) system is followed for all raw materials. * Maintain high standards of cleanliness, sanitation, and food safety (HACCP standards). * Report any deviation or product non\-conformance to the Production Manager immediately. * Support in inventory management and minimize product wastage. * Ensure smooth handover between shifts and timely completion of production targets. **Qualifications \& Experience:** * Diploma or Bachelor’s degree in Hotel Management / Food Technology or related field. * Minimum **3–5 years of experience** in food production or marination process (QSR / Catering / Central Kitchen preferred). * Knowledge of **food safety, hygiene standards, and HACCP procedures.** * Strong leadership and team management skills. * Ability to work under pressure and meet production deadlines Job Type: Full\-time
