Assists in leading staff while personally supporting all aspects of kitchen operations, including food preparation, procurement, and kitchen sanitation. This position helps ensure guest and employee satisfaction while maintaining operational budgets. **Candidate Profile** **Education and Experience Requirements** * High school diploma or equivalent (GED); 4 years of experience in kitchens, food service, or related fields. Or * Two-year degree in culinary arts, hotel and restaurant management, or a related field from an accredited college/university; 2 years of experience in kitchens, food service, or related fields. **Core Job Activities** **Ensure Food Standards and Responsibilities** * Maintain food handling and sanitation standards. * Fulfill all cooking and kitchen-related staff responsibilities during peak periods. * Supervise the preparation and production of cooked foods. * Ensure employees maintain clean and sanitary work areas. * Coordinate with restaurant and banquet departments to align service and timing for banquets/meetings and meals. * Adhere to loss prevention policies and procedures. * Strive to improve service performance. * Communicate areas requiring attention to staff and follow up to ensure understanding. * Lead shifts while personally preparing food and executing requests per required specifications. * Regularly prepare and cook, or prepare and cook for special guests or occasions, various types of food. * Supervise and coordinate the activities of prep cooks and kitchen staff. * Inspect quality of raw and cooked foods to ensure compliance with standards. * Assist in determining how dishes should be presented and execute decorative food displays. **Support Culinary Team Activities** * Supervise daily shift operations. * Ensure all staff have appropriate supplies, equipment, and uniforms. * Oversee staffing to meet guest service, operational, and financial goals. * Ensure assigned responsibilities are completed. * Participate in employee performance evaluation processes and provide feedback as needed. * Address employee issues and concerns. * Communicate performance expectations according to each position’s job description. * Participate in ongoing employee recognition programs. * Conduct training as appropriate. * Monitor employee progress toward meeting performance expectations. **Maintain Culinary Objectives** * Attend departmental meetings and consistently communicate clear, aligned messages regarding departmental goals to drive desired performance. * Support and assist in developing new menus, concepts, and promotions for restaurants and banquets. **Deliver Exceptional Customer Service** * Set a positive example for guest relations. * Handle guest inquiries and complaints, seeking supervisor assistance when necessary. * Empower staff to deliver exceptional customer service within established guidelines. **Other Responsibilities** * Report equipment failures within the department. * Procure appropriate supplies within budget and manage food and supply inventories. * Attend and participate in all relevant meetings. *Marriott International is committed to being an equal opportunity employer and welcomes all applicants, providing equal employment opportunities.
