**JOB PURPOSE**:
He is responsible for the day\-to\-day running of the back\-of\-house kitchen , ensuring all food items — including pastries, desserts, sandwiches, and light bites — are prepared, presented, and stored to SHOT London's global brand and quality standards in a premium specialty coffee concept where food is a curated, coffee\-led offering rather than a full restaurant menu; the Kitchen Chef's role is to protect the consistency, presentation, and food safety of this compact but high\-standard menu, while supporting a fast\-paced, guest\-facing café environment.
**KEY RESPONSIBILITIES**:
* Prepare, plate, and finish all kitchen\-produced menu items (pastries, cakes, desserts, sandwiches, and light bites) in line with brand standard recipes, portioning, and presentation guidelines.
* Maintain consistency of taste, texture, and visual presentation across every item leaving the kitchen, matching the standard set by brand flagship stores.
* Manage daily kitchen prep lists and production schedules to ensure the display counter and service points are fully stocked throughout trading hours, particularly during peak periods.
* Conduct quality checks on all incoming ingredients and finished products, rejecting anything that does not meet brand specifications.
* Maintain full compliance with Qatar Ministry of Public Health food safety regulations, HACCP principles, and brand's internal hygiene and quality control procedures.
* Monitor stock levels of kitchen ingredients and consumables; raise purchase requisitions and coordinate with approved suppliers to avoid shortages or wastage.
* Control food cost by managing portion control, minimising waste, and accurately recording spoilage and stock movement.
* Ensure correct storage, labelling, dating, and rotation (FIFO) of all raw materials and prepared items.
* Keep the kitchen, equipment, and storage areas clean, organized, and audit\-ready at all times, in line with brand operational audit standards.
* Coordinate closely with the Store Manager and Head Barista to align kitchen output with service flow, guest volume, and the overall guest experience.
* Support new menu introductions, seasonal items, and recipe adjustments issued by brand HQ, including trialing and standardizing new items locally.
* **Train, guide, and supervise kitchen assistants/commis on preparation standards, hygiene practices, and workstation organization.**
* Participate in pre\-opening store audits, food sampling sessions, and on\-site training programmes delivered by the brand team.
* Report equipment faults, maintenance needs, or supply issues promptly to the Store Manager.
Uphold brand standards and represent the kitchen professionally during any HQ visits, audits, or franchise reviews.
