Assists in leading staff while personally assisting in all areas of the kitchen, including food preparation, procurement, and kitchen sanitation. This role contributes to ensuring guest and employee satisfaction while maintaining operating budgets. **Candidate Profile** **Education and Experience Requirements** * High school diploma or equivalent (GED); 4 years of experience in kitchen, food service, or related professional area. Or * Two-year degree from an accredited university in culinary arts, hospitality and restaurant management, or related major; 2 years of experience in kitchen, food service, or related professional area. **Core Work Activities** **Ensuring Compliance with Culinary Standards and Responsibilities** * Maintains food handling and sanitation standards. * Performs all cooking and kitchen-related staff duties during peak periods. * Supervises the production and preparation of cooked foods. * Ensures employees maintain clean and sanitary work areas. * Collaborates with restaurant and banquet departments to coordinate service and timing for banquets/meetings and meals. * Adheres to loss prevention policies and procedures. * Strives to improve service performance. * Communicates areas needing attention to employees and follows up to ensure understanding. * Leads shifts while personally preparing food and fulfilling requests according to required specifications. * Regularly prepares and cooks, or prepares and cooks various types of food for special guests or occasions. * Supervises and coordinates the activities of prep cooks and kitchen staff. * Inspects the quality of raw and cooked food products to ensure they meet standards. * Assists in determining how dishes should be presented and conducts decorative food displays. **Supporting Culinary Team Activities** * Supervises daily shift operations. * Ensures all employees have proper supplies, equipment, and uniforms. * Oversees staffing levels to ensure guest service, operational needs, and financial objectives are met. * Ensures assigned responsibilities are completed. * Participates in the employee performance appraisal process and provides feedback as needed. * Addresses employee issues and concerns. * Communicates performance expectations based on each position's job description. * Participates in ongoing employee recognition programs. * Conducts training when appropriate. * Monitors employee progress in meeting performance expectations. **Maintaining Culinary Objectives** * Attends departmental meetings and consistently communicates clear, unified messages regarding departmental goals to achieve desired performance. * Supports and assists in developing new recipes, concepts, and promotional activities for restaurants and banquets. **Delivering Exceptional Customer Service** * Sets a positive example for customer relations. * Handles guest inquiries and complaints, seeking supervisor assistance when necessary. * Empowers employees to deliver exceptional customer service within established guidelines. **Additional Responsibilities** * Reports equipment malfunctions in the department. * Procures appropriate supplies according to budget and manages food and supply inventory. * Attends and participates in all relevant meetings. *Marriott International is committed to being an equal opportunity employer, welcoming all applicants and providing them with equal employment opportunities.
